The ingredients needed to prepare Ripe Jackfruit Dosa:
- You need 1 cup of Rice.
- Use 1 cup of Ripe Jackfruit (chopped).
- Take To taste of Jaggery.
- Prepare 2 pods of Cardamom.
- Provide 1 cup of Cardamom Rice -.
- You need 2 Tbsp of Grated Coconut.
- Provide 1 pinch of Salt.
Instructions to make Ripe Jackfruit Dosa:
- Wash and soak the rice for 1-2 hours..
- Remove the jackfruit pods, separate the seeds and tear them roughly..
- Drain the soaked rice and grind it with salt (2 rounds)..
- Now add jaggery, torn jackfruit pieces and cardamom pods. Some add the grated coconut at this stage; some like to add it to the batter to give it a nice texture (you can even cut the coconut into pieces and later add them to the batter). Grind to a fine paste and check for its sweetness. If desired, add more jaggery and grind further..
- Now transfer this paste to a bowl and add coconut (if not added earlier) and mix well. Add water in small quantities to get a thick batter of pouring consistency (the batter has to be used immediately or can refrigerate it, but will not be that good)..
- Heat the tawa on a medium flame. When hot, pour a ladel full of batter and spread it slightly (these dosas are generally thick and soft. They need to be cooked on a gentle heat because it will burn on a high heat due to jaggery)..
- Flip it, once done (i.e. first side golden brown and the other side with golden-brown spots) transfer it to a plate and serve it immediately with some ghee (optional)..
